Pickled Duck eggs recipe

Do you have a surplus of eggs? Pickle them! I remember being a young girl and going into the town’s general store to purchase the juice from the fluorescent red pickled sausages, and that’s how we made our pickled eggs!

These days my recipe is quite different, but it still brings back those happy memories. ♥️ This is a simple to make, nutritious, and tasty snack to pack and bring with you on the go.

Pickled Egg recipe:
•6 boiled eggs, peeled (double the recipe for a dozen)
• 8 oz beet juice
• 1/2 cup red wine vinegar (I use 1 cup because I love vinegar!)
•1/2 cup white vinegar
• 1/2 cup water
• 1 bay leaf
• 2 cloves garlic
• 1 tsp pickling spice
• 1/4 tsp salt
• ditzle of maple syrup 😊
• 1/2 onion

Place all ingredients in a non-reactive glass jar. Cover tightly and refrigerate for one week. Enjoy!

I play around with my spices and ingredients- don’t be afraid to experiment! That’s the best part of cooking! If you don’t have a plastic lid for your jar, place a thin piece of plastic between the metal lid and the jar. The vinegar and metal react and cause the metal to rust. I like to use my old pieces of Bee’s Wrap.
